Shake it Off

Happy Friday beautiful people! I have been slowly working on my vision board. When I see something that pops off of a page I cut it and save it into my “vision” folder. Hopefully by the end of the month it will all come together. One thing that has been on my list for the past few years is Health and Wellness. I must confess that I have picked up a few more pounds than I wanted to and now I need to find a way to shake them off because bikini season is right around the corner. Do you feel me?

After talking to my friends and reading up on a few different products I decided to go with 22 Days Nutrition to help me reach my goal of losing five pounds ASAP! Two weeks ago I purchased the 22 Days Plant Based Protein Powder in Vanilla and a box of Carmel protein bars. Thanks to our best friend Amazon Prime it was here next day and I got started right away. So far I am loving the taste of the products and I have dropped 2 pounds. I must add that eating out over the weekend did not helped me lol but I jumped right back on the program Monday morning.

I know that the key to this wellness journey is finding balance between diet, mindfulness and to incorporate exercise daily. It is true what they say about your metabolism slowing down the older you get and well for the first time in my life I really feel like I have to work to lose this weight.   3. 1 cup 365 Frozen Tropical Fruit Mix

  5. Blend and enjoy

Champagne Jello Shots

If you are staying in this New Years Eve like me then it is time to get our menus together. I know I will have my favorite assorted cupcakes from Nothing Bundt Cakes, a frozen lasagna (Ana Capris) lol, garlic bread and some Sparkling Apple Cider for the kiddos to ring in the new year. I have been searching Pinterest for the perfect festive drink and these jello shots jumped off the page like try me ASAP! I can’t wait to try them on Monday night with Le Marc Prosecco.  Check out the recipe for Champagne Jello Squares via the celebrationsathomeblog.com she has some great ideas. Cheers to 2019!!!!! CHAMPAGNE JELLO SQUARES RECIPE

  • 1 box plain gelatin {4 packets} + 2 cups water
  • 1 1/4 cups sugar
  • 2 1/2 cups Brut sparkling wine, Champagne, Cava, or Prosecco
  • 1 cup club soda
  • 3 Tablespoons Chambord liqueur
  • Package of fresh strawberries

Prepare gelatin according to package directions, using the 2 cups of water. Pour mixture into a mixing bowl, over sugar, stirring to dissolve sugar.

Let cool until warm to touch, and add sparkling wine, club soda, and liqueur; stir to combine.

Pour mixture into an 11 x 13 inch baking dish. Cover and refrigerate for several hours or over night, until set.

Once set, cut jello into bite-sized squares and serve. Add strawberries to rim of glass.

TIP: Use a small spatula to help lift jello off the bottom of the baking dish, gently.

Don’t you just love when people ask you what do you do all day? As a stay at home wife/mom/mompreneur /school volunteer/tutor/housekeeper, I know that you don’t just sit at home all day or play tennis. We wear many hats. Most of us have mastered the art of juggling running the  household and our businesses. I must admit, #Momlife definitely isn’t as easy as I thought it was going to be. After running around all day the magic question comes out, “what’s for dinner?” It can be very challenging trying to feed your family healthy nutritious meals every day. A few weeks ago I discovered stir-frying. I never really thought much about it. (I don’t know why not) It is so easy and makes a great meal in like twenty minutes. It’s perfect for those long days after basketball or soccer practice. Try mixing your favorite veggies with chicken or shrimp and add over jasmine rice or pasta and voila dinner is done! I was out to lunch with another Sporty Momma the other day and I was sharing with her some of the things that I have learned on this health journey. I started telling her how I have to go to Whole Foods to prep for my bone broth for the week. Once I told her all of the benefits of bone broth she said that I should definitely share this with my readers. So here we are. If you are interested to see the top 11 bone broths that excel in flavor, nutrition, quality, and price, buoy heath is the place to go.

Bone Broth is amazing! It has been around since the beginning of time. It is the real “Chicken Soup for your soul”. Drinking bone broth daily can have tremendous health benefits. It is soothing and girl I learned it can help reduce cellulite! Did you see that? It helps reduce cellulite!!! Here are my top 5 reasons to get your bone broth started tonight.

Beef Bone Broth Recipe

Ingredients:

  • 3 pounds organic grassfed beef soup bones (I get mine from Whole Foods)
  • 1 onion, chopped in quarters
  • 2-3 large carrots
  • 2-3 celery stalks
  • thyme
  • parsely
  • ¼ cup Braggs apple cider vinegar
  • Filtered cold water
  1. Roast the raw bones at 400 degrees in oven, which you can view here, for about 45 min to an hour.
  2. Put the roasted bones, veggies, and Apple Cider Vinegar into your crockpot or oven roaster and fill with water to cover the bones.
  3. Let the mixture sit for 30-60 minutes. DO NOT TURN THE HEAT ON YET. This allows the vinegar to extract minerals from the bones.
  4. Turn the crockpot on low or oven roaster at 200-225 degrees for 48 hours. And if you have a broken oven that needs repair, a good place like Appliance Hunter is the best place to go!
  5. Strain the broth. Store in the fridge up to 7 days, in the freezer 3-6 months, or deep freezer up to a year. Let the broth come to room temp before putting into the freezer. Leave the top off for 24 hours to freeze if you are storing in glass jars in the freezer to allow for expanding (or you will be very sad to see your cracked jar in a few days!).

Spinach Puffs

Looking for a quick appetizer? These look yummy for the holidays!

 

INGREDIENTS

  • 1 – 10 oz. package frozen chopped spinach, thawed
  • 1/2 cup crumbled feta
  • 1/4 cup finely chopped scallions
  • 1 tbsp olive oil
  • 1 tsp chopped fresh dill or parsley
  • 1 tsp garlic, pressed
  • Salt and pepper, to taste
  • 2 large eggs, separated
    Coupons
  • 1 – 2 sheets frozen puff pastry, thawed but still cold (leave it in the fridge to thaw)

HOW TO MAKE IT

    • Press the thawed spinach against a strainer with your hands until all of the water is out – you want to get as much out as possible so you don’t have a soggy filling
    • Mix the spinach, feta, scallions, olive oil, dill/parsley, garlic and some salt and pepper – taste the mixture and adjust the seasonings as you please
    • Beat one of the eggs in a small bowl and then fold it into the spinach mixture
    • Roll out the defrosted puff pastry dough on a floured surface and cut it into approximately 12-16 squares if you’re planning on using mini muffin tins (this takes a little trial and error to get the right size)
    • Place a square of dough into the muffin tin, push it against the sides and leave the corners draped over the edge – then spoon some of the spinach mixture into the center and fold the corners of the dough over the filling and pinch them together in the center
    • Once you’ve used up all of the filling, beat the remaining egg with a tbsp of water and brush the tops of the puff pastry with the egg wash and bake at 400°F until the pastry is golden and puffed – approximately 20 minutes
    • Run a sharp knife around the edges of the pan to loosen and turn them out onto a rack to cool a bit before serving
      • If you’re planning on serving these at a later date, do not brush with egg wash and just freeze them in the muffin tins wrapped tightly in plastic wrap and then aluminum foil.  If you want to remove them from the pans, freeze them first and then pop them out once frozen and store them in plastic freezer bags.  Just don’t forget to brush them with the egg wash before baking them!

Avocado Smoothie

The avocado has become a very popular food among health conscious individuals. It has several health benefits and is known as a super food! It is packed with plenty of nutrients like vitamin K, Folate, vitamin C, Potassium, and it is a good source of protein. I never thought that I would be drinking avocado smoothies three times a week, but I love it. When I am on the go, I stop and grab a live juice 4 from Dr. Smood. I found this delicious recipe on Pinterest so you can DIY! Enjoy!

Ingredients:

1 Cup water
1/2 medium ripe avocado, peeled & pitted
2 Cups spinach
2 Cups frozen pineapple chunks
1 to 2 Tbsp honey or agave, or to taste

 

Directions:

  1. Add all of the ingredients into the blender in order except for sweetener. Blend until smooth.
  2. Turn off blender. Add honey or agave to taste.
  3. Enjoy

Stacy’s Shrimp Egg Rolls

Ingredients

1/2 pound fresh shrimp                                                1/2 cup chopped cilantro

1  package shredded cole slaw                                      Egg Roll Wraps

1/2 cup shredded carrots                                               Vegetable Oil

1/2 cup chopped water chestnuts                                 Soy Sauce

1/4 cup chopped onions                                                 Corn starch

Salt                                                                                      Sugar

 

Directions

1. Combine the following in a small bowl, stir and set aside

2 tablespoons soy sauce

2 teaspoons cornstarch

1/2 teaspoon sugar

1/4 teaspoon salt

 

2. Cook shrimp and set aside

3. Saute the remaining ingredients then add shrimp

4. Add mixture from step 1 to shrimp mix

5. Add cilantro

6. Roll mixture into egg rolls

7. Fry until crispy golden brown

 

Serves 4-6

Dinner for Two

Summer is here and for most of us busy mommas that means it is time to relax and have some fun. I am normally not a big cook. I mean I prepare the average 2-3 meals a week but during the summer I chill. That is why I was so excited when Applebee’s contacted me to try their new wood fired menu items.

My youngest daughter and I headed to the Cutler Bay location. The managers were awesome and even gave us a tour of the kitchen. (The little one thought we were on a field trip) He showed us how they cut, season and grill fresh meats daily. We also saw the wood soaking and all of the workers preparing for a very busy Friday afternoon.

After our tour we were really anxious to try the food. I ordered the Southwest Salad with marinated steak which may be just as flavorful as the one on https://makeadish.net/recipe/steak-and-gorgonzola-salad/. The lil one had chicken fingers and fries. Our waitress was very pleasant and took great care of us. The food was delicious!

Starting this Summer, the Applebee’s menu will include:

  • 8 oz. and 6 oz. Hand-cut USDA Choice Top Sirloin Steaks
  • Hand-cut Bone-in Pork Chops with Honey Apple Chutney
  • Cedar-grilled Salmon with Maple Mustard Glaze
  • Grilled chicken breast
